Ingredients

The ingredients are:
  • 1/2 cup goji berries (70 grams)
  • 1 cup almonds (160 grams)
  • 150 grams shredded coconut (2 cups)
  • 1/4 cup chia seeds (50 grams, white)
  • 150 grams pitted dates (10 fresh dates specified)
  • 50 grams cacao powder (raw, 1/2 cup)
  • 1/4 cup maple syrup (35 grams)
  • 150 grams chocolate, melted (70% dark specified)
  • 1/4 cup pistachio nuts (finely chopped, 35 grams)

How to Make

  • Step 1: Place the goji berries in a small heatprof bowl, cover with boiling water and set aside for 20 minutes to soak and then drain and squeeze out as much liquid as possible.

  • Step 2: Place the goji berries, almonds, coconut, chia seeds. dates.cacao and maple syrup in a food processor and process, for 4 minutes or until the mixture comes together.

  • Step 3: Roll tablespoons of the mixture into balls and working one at a times, dip a ball into the chocolate, allowing the excess to drip off and place on a large tray lines with non-stick baking paper and sprinkle with the pistachio.

  • Step 4: Place in the refrigerator for 20 minutes to set and then serve. (Should yield 28 balls.
