Step by Step Method

Step 1

Preheat oven to 350 degrees F.

Step 2

Set oven rack to second-lowest position.

Step 3

Grease a 13 x 9-inch baking dish.

Step 4

In a mixing bowl combine cake mix, lemon zest, pudding mix, oil and eggs; using an electric mixer beat at medium speed for about 1 minute.

Step 5

Add in soda and beat until thoroughly combined.

Step 6

Transfer the batter to prepared baking dish.

Step 7

Bake for about 40-45 minutes or until cake tests done.

Step 8

In a small bowl combine the confectioners sugar with lemon juice until smooth, then carefully spread over the warm cake.

Step 9

Cool on a wire rack.

I made the cake but didn't use the glaze. Instead I used a Raspberry Cream Cheese Frosting which was a good choice for my son's birthday cake. We loved the combination of raspberry and lemon. The cake was nice and moist and really lemony, which we loved!
