Step 1
Preheat oven to 350 degrees.
Step 2
Whisk together cake mix, oil, eggs, and pumpkin pie spice in a large bowl until smooth, then refrigerate until firm - at lest 30 minutes or overnight.
Step 3
Roll dough into 1" balls and coat thoroughly in powdered sugar (do not shake off excess sugar). Place on an ungreased cookie sheet, about 2" apart.
You can substitute granulated sugar for the powdered - giving a different effect.
Step 4
Bake until cookies are puffed and cracked, about 12 minutes. Cool completely and store any leftovers in an airtight container.
