Ingredients

  • 1 box (14.5 ounce) gingerbread cake mix
  • 1/3 cup oil (canola oil)
  • 2 large eggs
  • 1 teaspoon pumpkin pie spice
  • 1/3 cup powdered sugar

How to Make

  • Step 1: Preheat oven to 350 degrees.

  • Step 2: Whisk together cake mix, oil, eggs, and pumpkin pie spice in a large bowl until smooth, then refrigerate until firm - at lest 30 minutes or overnight.

  • Step 3: Roll dough into 1" balls and coat thoroughly in powdered sugar (do not shake off excess sugar). Place on an ungreased cookie sheet, about 2" apart.

  • You can substitute granulated sugar for the powdered - giving a different effect.

  • Step 4: Bake until cookies are puffed and cracked, about 12 minutes. Cool completely and store any leftovers in an airtight container.
