Step by Step Method

Step 1

Clean your sweet potatoes first, then polk them with holes several times with a fork so that they don't explode in the microwave.

Step 2

Microwave them 5 to 10 minutes, or until they are tender inside. Turn them over once while cooking them.

Step 3

As soon as they are cool enough, remove the skins and place the sweet potatoes in a large bowl. Add the rest of the ingredients. Mash the potatoes and mix everything together. Serve right away while warm.

What I enjoyed about this dish was the ease of cooking and the very light taste of vanilla...it was nice and soft and really had the sweet potato taste...made for "Only the Lonely" tag game...
