Step by Step Method

Step 1

Preheat oven to 350 degrees

Step 2

In dutch oven

Step 3

Season pork loin with salt, black pepper, paprika, and caraway seeds

Step 4

Spread mustard over pork.

Step 5

Heat vegetable oil in a large skillet over medium-high heat

Step 6

Fry pork until browned on all sides, about 15 minutes

Step 7

Add onion, turnip, carrots, celery,celeriac, and spring onions to the same skillet used to fry pork

Step 8

Cook and stir until vegetables are tender, about 10 minutes.

Step 9

Spread vegetable mixture around pork in pan.

Step 10

Add beer and water

Step 11

Cover with foil

Step 12

Bake in oven for 3 hours

Step 13

Uncover

Step 14

Add butter and corn starch slurry last 15 minutes

My German hubby is a happy guy...he really enjoyed this meal...I really liked it...I did downsize the recipe to serve 2...I had a 1 pound pork loin roast and it came out so tender...I didn't use celery root...but did add in some Yukon gold baby potatoes from my garden instead...I was expecting the dish to cook for an hour based on the size of the pork...but when I checked it at 30 minutes it was done...as well as the veggies...so I turned off the oven and jumped to step 14...the hubby was caught eating the last of the veggies in the pan...that tells me it was so worth making it for him...made for "FYC" tag game...
