  • For the best flavor, use fresh ground beef instead of pre-packaged.
  • Make sure to use mild green chilies for a milder flavor.

  • Substitute ground turkey for the ground beef to reduce fat and calories. This is a healthier alternative that still provides the same flavor.
  • Substitute vegetable broth for the water to add more flavor and depth to the soup. This will make the soup more savory and flavorful.

Vegetarian Version Replace the ground beef with a vegetarian meat substitute such as tempeh, tofu, or seitan. Omit the egg and replace with 1/4 cup of breadcrumbs. Follow the same instructions for making the meatballs and adding to the soup.

Mexican Rice: This fluffy, flavorful Mexican-inspired rice dish is the perfect accompaniment to the Gatlin Brothers' Mexican Meatball Soup. The added ingredients of garlic, onion, and chili powder give the dish an extra kick that will complement the soup's flavor perfectly.

Chili Lime Corn: This simple side dish is the perfect complement to the Gatlin Brothers' Mexican Meatball Soup. The sweetness of the corn combined with the zesty flavor of chili and lime will provide a nice contrast to the soup, while still allowing the flavors to complement each other.

Delicious! Quick and easy and made for one great tasting soup. I did saute the onions and as I always do with meatballs baked the mini meatballs in the oven before popping them into the soup pot. This is another soup that earned a plastic sleeve and made it to my recipe drawer. A winner and a repeatable!

Such a fast and easy soup! We both thoroughly enjoyed our dinner. I had left over beef and chicken broths and used that for the water. I also baked the meatballs before adding to the soup. And used a wonderful Mexican chili powder. Served it over rice and garnished with sour cream & cilantro. Thanks for a wonderful soup! Made for Billboard Recipe Tag.
