Step by Step Method

Step 1

Crush the garlic to a pulp in a garlic crusher or in a mortar and pestle; Mix the egg yolk with a small pinch of salt in a bowl.

Step 2

Add the oil drop by drop as if you were making a mayonnaise, making sure you beat constantly.

Step 3

When the sauce is thick enough to your liking season with salt and pepper to taste then stir in the lemon juice.

NOTE ~ This sauce can be also made in a blender or food processor.

Lovely sauce, lovely flavour. Made it in the blender. Served it over a buddah bowl. I did find that the olive oil was too strong and oily for us and over powered the garlic. Maybe a lighter oil like avocado would be better. Thank you for sharing Tis! Made for Billboard Recipe Tag.
