Step 1: Crush the garlic to a pulp in a garlic crusher or in a mortar and pestle; Mix the egg yolk with a small pinch of salt in a bowl.
Step 2: Add the oil drop by drop as if you were making a mayonnaise, making sure you beat constantly.
Step 3: When the sauce is thick enough to your liking season with salt and pepper to taste then stir in the lemon juice.
Step 4: NOTE ~ This sauce can be also made in a blender or food processor.
