Ingredients

The ingredients are:
  • 5 garlic cloves, peeled
  • 1 egg yolk (yolk only)
  • Salt and pepper, to taste
  • 225 ml olive oil (1 cup)
  • 1 tablespoon lemon juice

How to Make

  • Step 1: Crush the garlic to a pulp in a garlic crusher or in a mortar and pestle; Mix the egg yolk with a small pinch of salt in a bowl.

  • Step 2: Add the oil drop by drop as if you were making a mayonnaise, making sure you beat constantly.

  • Step 3: When the sauce is thick enough to your liking season with salt and pepper to taste then stir in the lemon juice.

  • TO SERVE

  • Step 4: NOTE ~ This sauce can be also made in a blender or food processor.
