"Rösti is so popular in Switzerland that Röstiteller are sold everywhere. These ornamental plates, specially designed to serve this round potato cake, are usually so picturesque that they are hung on kitchen walls as decorations. Often they are inscribed with proverbs that differ from canton to canton, just like Rösti recipes. In German cantons, Rösti is made with onions, elbow macaroni, Appenzeller cheese, or caraway seeds. Step by Step Method
Step 1
When potatoes have cooled, peel and grate coarsely into a large bowl.
Step 2
Add green onions, caraway seeds, salt, and pepper, and mix well.
Step 3
Over medium-high heat, melt butter in a large, non-stick skillet.
Step 4
Add potato mixture and press into a large, compact cake with a spatula.
Step 5
Continue to cook, pressing and compacting the cake, for 3 or 4 minutes.
Step 6
When a nice brown crust forms on the bottom, turn Rösti over by sliding it out onto a large plate.
Step 7
Invert the frying pan over the plate.
Step 8
Using pot holders, grip pan and plate together on opposite sides.
Step 9
In one motion, flip the pan and plate so the Rösti falls into the pan. (This takes practice.)
Step 10
Cook the other side, pressing and compacting the cake, for 3 to 4 minutes.
Step 11
Pour half-and-half evenly over potato cake.
Step 12
Turn heat down to medium low, cover skillet, and cook until the other side turns brown (about 7 minutes).
Step 13
Slide cake onto a plate and serve.
