Step 1: When potatoes have cooled, peel and grate coarsely into a large bowl.
Step 2: Add green onions, caraway seeds, salt, and pepper, and mix well.
Step 3: Over medium-high heat, melt butter in a large, non-stick skillet.
Step 4: Add potato mixture and press into a large, compact cake with a spatula.
Step 5: Continue to cook, pressing and compacting the cake, for 3 or 4 minutes.
Step 6: When a nice brown crust forms on the bottom, turn Rösti over by sliding it out onto a large plate.
Step 7: Invert the frying pan over the plate.
Step 8: Using pot holders, grip pan and plate together on opposite sides.
Step 9: In one motion, flip the pan and plate so the Rösti falls into the pan. (This takes practice.)
Step 10: Cook the other side, pressing and compacting the cake, for 3 to 4 minutes.
Step 11: Pour half-and-half evenly over potato cake.
Step 12: Turn heat down to medium low, cover skillet, and cook until the other side turns brown (about 7 minutes).
Step 13: Slide cake onto a plate and serve.
