"I had some leftover food from other recipes,and decided to see what I could come up with. If you like corn,onions,and Spam you just might enjoy this. Since the Spam already has a lot of salt I didn't add any.But if you make this,taste for yourself and see what you think.This is meant as a side item,so the portions will be small. Step 1

Heat oil until hot,but not smoking in medium sized skillet,over medium heat.

Step 2

Add onion and Spam,and cook until Spam is lightly browned and onion is tender.

Step 3

Stir in corn and sprinkle with pepper and cook until corn is heated through.

Really good and Bill and I quite enjoyed. We were out all day so I stopped at the market and bought a rotisserie chicken and some premade mac & cheese. Then all I had to do was take a couple of minutes to saute this, which I made with frozen corn and a "single pack" of SPAM which comes in the envelope. I may have had extra onion- I just used some I already had chopped up in the refrigerator and didn't measure. Easy peasy. Thanks, Shapes!
