Step 1

Reduction: Saute shallots in butter until just softened. Add vinegar, lemon juice and wine, then reduce until you have about 2 tablespoons of liquid left.

Step 2

Add cream and stir constantly over low heat. When mixture begins to thicken, stir in remaining butter to melt.
