"From Special Diets for Special Kids. Gluten and dairy free. I only used the food processor through step 3. I always use coconut oil, but make sure the eggs are room temp, or they will harden the oil. "

Step by Step Method

Step 1

Preheat oven to 375 degrees.

Step 2

Change to the steel blade and add eggs, sugar, oil, and vanilla. Mix well.

Step 3

Mix together flour, xanthan gum, cinnamon, salt, baking soda & powder, and walnuts or chocolate chips and add to the processor bowl. Process just until mixed.

Step 4

Pour into two greased loaf pans and bake for 1 hour or until done in the center.
