Ingredients

The ingredients are:
  • 1 large or 2 medium zucchini
  • 4 eggs
  • 2 cups sugar (or 1 1/2 cups honey)
  • 1 cup oil (or 1/2 cup prune puree)
  • 1 teaspoon vanilla extract
  • 3 cups gluten free flour mix (see my recipe by Carol Fenster)
  • 1 tablespoon xanthan gum
  • 1 tablespoon cinnamon
  • 1 teaspoon salt
  • 1 teaspoon GF baking soda
  • 1 teaspoon GF baking powder
  • 1 cup walnuts, chopped or chocolate chips (optional)

How to Make

  • Step 1: Preheat oven to 375 degrees.

  • Step 2: Change to the steel blade and add eggs, sugar, oil, and vanilla. Mix well.

  • Step 3: Mix together flour, xanthan gum, cinnamon, salt, baking soda & powder, and walnuts or chocolate chips and add to the processor bowl. Process just until mixed.

  • Step 4: Pour into two greased loaf pans and bake for 1 hour or until done in the center.
