"These potatoes are peeled and baked whole. They get a nice golden brown and are very soft inside. Potatoes should be medium size. If they are larger, cut them in half."

Step by Step Method

Step 1

Heat oven to 350°F.

Step 2

Put oil and butter in a baking dish. Put dish in oven until butter melts.

Step 3

Add potatoes and garlic and turn to coat all sides of potatoes. Bake 15 to 20 minutes until golden brown.

Step 4

Add the broth and rosemary and bake another 15 minutes, or until the stock is absorbed and potatoes are soft. Season with salt and pepper.

Step 5

Serve. (discard garlic).

I made them to have with an oven roast and they are delicious! Great flavors from the garlic and rosemary, who always pair so well. I will make these often.

Excellent dish! Love the subtle flavours of the garlic and rosemary. Did remove the garlic and served in a separate dish at the table. This will be on our Easter menu for our visiting family to enjoy! Thanks Mike for another of your awesome recipes! Made for Billboard Recipe Tag.
