Step 1

Preheat oven to 350 degrees F.

Step 2

Place carrots in a saucepan, cover with water; bring to a boil and cook until tender. Drain, transfer to a food processor (I cool the carrots a little before I process them). Process until completely mashed. Add in melted butter, white sugar, flour, baking powder, vanilla extract.

Step 3

Cool slightly then mix in eggs.

Step 4

Transfer to a 2-quart baking dish baking dish.

Step 5

Bake in preheated oven for 30 minutes.

I made this as written with no omissions or subs. I also opted not to add the cinnamon or nutmeg. Everyone really enjoyed the flavor and texture. It was delicious and creamy without any cream. It was exactly as described. I will be adding it to my Best of 2013 cookbook. Made for Billboard tag.

I did add a sprinkling of nutmeg and was delighted with the results. It was enjoyed by my gang and it went so well with our ham dinner for Easter. We will have it again sometime!
