Step by Step Method
Step 1
Preheat oven to 350 degrees F.
Step 2
Place carrots in a saucepan, cover with water; bring to a boil and cook until tender. Drain, transfer to a food processor (I cool the carrots a little before I process them). Process until completely mashed. Add in melted butter, white sugar, flour, baking powder, vanilla extract.
Step 3
Cool slightly then mix in eggs.
Step 4
Transfer to a 2-quart baking dish baking dish.
Step 5
Bake in preheated oven for 30 minutes.
