Ingredients

The ingredients are:
  • 2 pounds carrots, peeled and sliced
  • 1/2 cup butter (melted, salted butter)
  • 1/2 white sugar
  • 1/4 cup brown sugar
  • 3 tablespoons all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla
  • 3 eggs (beaten)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Place carrots in a saucepan, cover with water; bring to a boil and cook until tender. Drain, transfer to a food processor (I cool the carrots a little before I process them). Process until completely mashed. Add in melted butter, white sugar, flour, baking powder, vanilla extract.

  • Step 3: Cool slightly then mix in eggs.

  • Step 4: Transfer to a 2-quart baking dish baking dish.

  • Step 5: Bake in preheated oven for 30 minutes.
