"These cookies are light but the chocolate gives them rich flavor."
Preheat oven to 350'.
Stir cream and sugar together well. An even heavier cream is preferred by some.
Stir in the almonds, orange peel, and flour.
Spread a cookie sheet with unsalted shortening, flour it lightly, and drop the batter on it from a teaspoon, keeping each cookie well apart from the others.
Bake until golden brown--10-15 minutes. These need careful watching as they burn easily.
When they have cooled on a rack, spread the bottoms of the cookies with the melted chocolate. Use a spatula or spear the cookie on a fork and dip it into the chocolate.
Dry on wax paper, bottoms up. Cookies will be very thin.
