Step 1: Preheat oven to 350'.
Step 2: Stir cream and sugar together well. An even heavier cream is preferred by some.
Step 3: Stir in the almonds, orange peel, and flour.
Step 4: Spread a cookie sheet with unsalted shortening, flour it lightly, and drop the batter on it from a teaspoon, keeping each cookie well apart from the others.
Step 5: Bake until golden brown--10-15 minutes. These need careful watching as they burn easily.
Step 6: When they have cooled on a rack, spread the bottoms of the cookies with the melted chocolate. Use a spatula or spear the cookie on a fork and dip it into the chocolate.
Step 7: Dry on wax paper, bottoms up. Cookies will be very thin.
