Step by Step Method

Step 1

Heat a large non-stick frying pan over moderate heat and add eggs, tilt to coat surface, cooking for 1 minute or until set and then slice onto a plate.

Step 2

Preheat oven to 180C/160C fan forced.

Step 3

Line a 19cm x 9cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.

Step 4

Combine mince, breadcrumbs and egg in a large bowl.

Step 5

Process onion, carrot, celery, garlic, plum sauce, soy sauce, ginger and five spice powder in a food processor until finely chopped.

Step 6

Using hands squeeze excess liquid from vegetable mixture and then add to mince mixture, season and mix well.

Step 7

Place sweet potato in a microwave safe bowl with the water and cover and microwave on high (100%) for 10 minutes or until soft and drain.

Step 8

Process sweet potato, extra plum sauce and sweet chilli sauce in a food processor until smooth and then transfer to a piping bag fitted with a 1cm plain nozzle.

Step 9

Place a 40cm piece of baking paper on a clean work surface and spray with oil.

Step 10

Shape pork mixture on paper and form into a 30cm x 20cm rectangle.

Step 11

Top with omelette and onion and using paper as a guide, roll meatloaf to form a log, remove paper and place meatloaf in prepared pan, press down firmly.

Step 12

Pipe potato puree over top of meatloaf to cover.

Step 13

Bake for 55 minutes or until cooked.

Step 14

Serve sprinkled with extra onion, sesame seeds and chilli flakes.
