Step 1: Heat a large non-stick frying pan over moderate heat and add eggs, tilt to coat surface, cooking for 1 minute or until set and then slice onto a plate.
Step 2: Preheat oven to 180C/160C fan forced.
Step 3: Line a 19cm x 9cm (base measurement) loaf pan with baking paper, extending paper at long sides for handles.
Step 4: Combine mince, breadcrumbs and egg in a large bowl.
Step 5: Process onion, carrot, celery, garlic, plum sauce, soy sauce, ginger and five spice powder in a food processor until finely chopped.
Step 6: Using hands squeeze excess liquid from vegetable mixture and then add to mince mixture, season and mix well.
Step 7: Place sweet potato in a microwave safe bowl with the water and cover and microwave on high (100%) for 10 minutes or until soft and drain.
Step 8: Process sweet potato, extra plum sauce and sweet chilli sauce in a food processor until smooth and then transfer to a piping bag fitted with a 1cm plain nozzle.
Step 9: Place a 40cm piece of baking paper on a clean work surface and spray with oil.
Step 10: Shape pork mixture on paper and form into a 30cm x 20cm rectangle.
Step 11: Top with omelette and onion and using paper as a guide, roll meatloaf to form a log, remove paper and place meatloaf in prepared pan, press down firmly.
Step 12: Pipe potato puree over top of meatloaf to cover.
Step 13: Bake for 55 minutes or until cooked.
Step 14: Serve sprinkled with extra onion, sesame seeds and chilli flakes.
