"I made this so many years ago, and we really enjoyed this recipe. I had forgotten all about it, and I have found the original recipe I posted on a different food site. I think its about time to tickle the families taste buds again with this great fish recipe once again. Time to share again. Served with home made chips and salad this makes for a fabulous meal."

Step by Step Method
Step 1
Finely grate the rind of 1 of the mandarin's.
Step 2
Juice 2 of the mandarins and set aside for later use. Peel and segment the remaining 2 mandarins and also set aside.
Step 3
Melt butter in a non-stick frying pan on medium and add the rind and swirl to combine.
Step 4
Lightly season fish (optional) and cook the fish for 1-2 mins each side, until golden and cooked through remove fish and drain on kitchen paper. (Keeping the fish warm).
Step 5
Reheat butter in pan. Add juice and simmer for 30 secs.
Step 6
Add mandarin segments and dill, swirl to warm through. Top fish with mandarin and dill Sauce. Then garnish with chopped chives to serve.
Step 7
Serve with chips and salad (optional).
