Step 1: Finely grate the rind of 1 of the mandarin's.
Step 2: Juice 2 of the mandarins and set aside for later use. Peel and segment the remaining 2 mandarins and also set aside.
Step 3: Melt butter in a non-stick frying pan on medium and add the rind and swirl to combine.
Step 4: Lightly season fish (optional) and cook the fish for 1-2 mins each side, until golden and cooked through remove fish and drain on kitchen paper. (Keeping the fish warm).
Step 5: Reheat butter in pan. Add juice and simmer for 30 secs.
Step 6: Add mandarin segments and dill, swirl to warm through. Top fish with mandarin and dill Sauce. Then garnish with chopped chives to serve.
Step 7: Serve with chips and salad (optional).
