Ingredients

The ingredients are:
  • 296 grams oranges (4 mandarin oranges)
  • 500 grams white fish (firm, cut into 4 fillets)
  • Seasoning, to taste
  • 148 grams oranges (2 imperial mandarin oranges, peeled and segmented)
  • 2 tablespoons chopped dill
  • 2 tablespoons snipped chives (to garnish)

How to Make

  • Step 1: Finely grate the rind of 1 of the mandarin's.

  • Step 2: Juice 2 of the mandarins and set aside for later use. Peel and segment the remaining 2 mandarins and also set aside.

  • Step 3: Melt butter in a non-stick frying pan on medium and add the rind and swirl to combine.

  • Step 4: Lightly season fish (optional) and cook the fish for 1-2 mins each side, until golden and cooked through remove fish and drain on kitchen paper. (Keeping the fish warm).

  • Step 5: Reheat butter in pan. Add juice and simmer for 30 secs.

  • Step 6: Add mandarin segments and dill, swirl to warm through. Top fish with mandarin and dill Sauce. Then garnish with chopped chives to serve.

  • Step 7: Serve with chips and salad (optional).
