Step by Step Method

Step 1

Season the flour with salt and pepper and your favorite spices and herbs, then

Season the beaten eggs with salt and pepper.

Step 3

Working with 1 piece of fish at a time, gently coat the fish with the flour, shaking off any excess, then dip it into the beaten egg, coating it well. Finish the fish stick by rolling the sole in the bread crumbs. Repeat.

Step 4

Heat about 1/2 to 3/4 inch oil in a large, deep-sided skillet until hot but not smoking.

Step 5

Fry the fish strips in batches, turning occasionally, until golden brown on all sides and cooked through, 6 minutes, depending on the thickness of the fish. Transfer the fish sticks to paper towels to drain.

Step 6

Serve with the lemon wedges and a dip if so desired.

I used panko for the coating and seasoned with garlic and onion powder, salt and pepper, lemon pepper and a bit of cayenne pepper. Turned out very well! Nice and crispy on the outside with great flavor and fish was juicy as could be. Had french fries with them and it was yummy!

Cod was on sale this past week so I picked some up to make these. They turned out golden brown, and crispy and the fish was so yummy to my tummy! I froze 3/4 of the batch and will use for my lunches when I feel like fish and french fries for lunch!

I loved frozen fish sticks as a kid and wanted to try these. I used flounder, so though they didn't taste just like those in the box, they were delicious with ketchup to dip them in. We had crinkle cut french fries on the side!
