Ingredients

The ingredients are:
  • 2 cups all-purpose flour
  • Salt and freshly ground black pepper, to taste
  • Spices and herbs (your favorite to use)
  • 3 large eggs, beaten
  • 450 to 500 grams cod fish (5 fillets, skinless and halved lengthwise or cut into strips, or other firm yet delicately flavored fish like white fish or flounder)
  • 2 cups panko (or dried bread crumbs)
  • Oil for frying

How to Make

  • Step 1: Season the flour with salt and pepper and your favorite spices and herbs, then

  • Step 2: Season the beaten eggs with salt and pepper.

  • Step 3: Working with 1 piece of fish at a time, gently coat the fish with the flour, shaking off any excess, then dip it into the beaten egg, coating it well. Finish the fish stick by rolling the sole in the bread crumbs. Repeat.

  • Step 4: Heat about 1/2 to 3/4 inch oil in a large, deep-sided skillet until hot but not smoking.

  • Step 5: Fry the fish strips in batches, turning occasionally, until golden brown on all sides and cooked through, 6 minutes, depending on the thickness of the fish. Transfer the fish sticks to paper towels to drain.

  • Step 6: Serve with the lemon wedges and a dip if so desired.
