Step by Step Method

Step 1

In a skillet fry the bacon until crisp; remove with a slotted spoon and set aside - drain on paper towels. Drain all but 1 tablespoon of the drippings and then add the vegetables (onion - carrots) and cook over medium heat until tender (5-10 minutes). Slide vegetables to edge of skillet and add the fish and water and then bring to a boil over medium high heat. Reduce heat, cover and simmer, turning once until fish flakes with a fork (15 minutes).

Step 2

Break the fish into pieces.

Step 3

Combine the milk and saiad dressing mix in a small bowl. Stir into fish mixture and bring to a boil. Reduce heat, cover and simmer for 5 minutes. Taste and adjust seasoning, adding pepper if desired. Stir in bacon.

Made using fresh garden vegetables and lovely northern Saskatchewan fish. Sorry so late with the making had planned to use the Buttermilk option but didn't manage to find a packet. Had a bowl before adding a touch less of the Ranch dressing mix, the combination was so creamy and good it was a five with just salt and pepper, which also sees it as a great soup base for chowders!

Very good! I made a change and used cod fish instead, I prefer the texture of it. I loved the addition of the ranch dressing mix I never would have thought to use it in soup, I used more bacon that 2 slices. We loved this soup and will make again, thank you ellie! I tagged this for the Billboard game.
