Ingredients

The ingredients are:
  • 2 ounces sliced bacon (2 slices, chopped)
  • 2 yellow onions, chopped
  • 8 ounces potatoes (2 potatoes, peeled and cut into 1/4 inch pieces)
  • 6 ounces carrots (2 carrots, sliced)
  • 1 package (16 ounce) frozen tilapia fish fillets, thawed (we use tilapia)
  • 2 cups water
  • 2 cups milk
  • 1 package (1.4 ounce) dry ranch dressing mix (buttermilk salad dressing mix)
  • Pepper

How to Make

  • Step 1: In a skillet fry the bacon until crisp; remove with a slotted spoon and set aside - drain on paper towels. Drain all but 1 tablespoon of the drippings and then add the vegetables (onion - carrots) and cook over medium heat until tender (5-10 minutes). Slide vegetables to edge of skillet and add the fish and water and then bring to a boil over medium high heat. Reduce heat, cover and simmer, turning once until fish flakes with a fork (15 minutes).

  • Step 2: Break the fish into pieces.

  • Step 3: Combine the milk and saiad dressing mix in a small bowl. Stir into fish mixture and bring to a boil. Reduce heat, cover and simmer for 5 minutes. Taste and adjust seasoning, adding pepper if desired. Stir in bacon.
