"This originally came from a friend, but I've since adapted it to something so completely different I feel no shame posting it as my own. Feel free to adapt it yourself to what works for you. What I'm calling prep time is stove top time, while cooking time is oven time."

Step by Step Method

Step 1

In a large skillet, combine sausage and ground beef. Brown and crumble (about 10 minutes); drain excess grease.

Step 2

Add salt and olive oil to a large pot of water and bring to a boil. Add lasagna noodles and cook, stirring gently occasionally, about 10 minutes.

Step 3

At the same time you add the noodles to the water, add spaghetti sauce to meat mixture and simmer until noodles are done, stirring occasionally.

Step 4

When noodles are done, drain and rinse thoroughly (be careful, they tear fairly easily).

Step 5

Combine cottage and Parmesan cheeses in a small bowl. Preheat oven to 350F and place a sheet of aluminum foil on bottom shelf to catch drips. Spray a 9x13-inch glass baking dish with cooking spray.

Step 6

Lay three noodles flat in bottom of baking dish, then spread 8 ounces of Mozzarella and 1/3 of meat mixture over top.

Step 7

Layer another three noodles, then the mushrooms. Carefully spread cottage cheese mixture over top, then another 1/3 of meat mixture.

Step 8

Layer the last three noodles, then the remaining meat and another 1/3 of Mozzarella cheese. Spread remaining 1/3 meat mixture over top.

Step 9

Bake at 350F for 35 minutes. Spread remaining 1/3 Mozzarella over the top, and bake an additional 10 minutes. Let stand 10-15 minutes before serving.

This is a very basic recipe and we liked it, but if I make it again I will adapt it by adding in some spices, onions and garlic. It was kind of bland for us in the flavor department. Hot sausage might even be good.
