"This recipe goes back to my first bread maker, it's the one I turn to when I want bread or rolls with that old fashioned taste. For brunches it remains my favourite dough when making my - #recipe7246 - Cinnamon Bun Ring 7246 Couldn't resist trying foccoci after reading one of the reviews - we loved it! In my breadmaker results in great tasting light as a feather loaf of bread each and every time, a real plus when you want a great loaf of bread for company meals. Great on the dough cycle for bread, buns, rolls and Monkey Bread, just the right amount for the monkey and pull apart breads that call for frozen bread dough. Requires a machine that is capable of making dough using up to 4 cups of flour."

Step by Step Method
Step 1
Be sure to whisk the flour before measuring - I soften the butter in the microwave Measure ingredients carefully, add ingredients in the order listed, ending with the flour and yeast. Choose your cycle.
Step 2
During the first mix check to be sure your dough has the right amount of water and flour - the dough should look smooth and shiny. Flours differ, you may need to add lukewarm water a teaspoon at a time if your dough is dry - sprinklings of flour if too sticky. Never add more than 3 tablespoons of either the water or flour. When cycle complete turn out on a rack to cool.
Step 3
FOR DOUGH use the dough cycle, when complete shape into bread or rolls - braided bread and dinner buns topped with sesame seed are winners at our house. Brush tops with softened butter or margarine and rise 20 to 30 minutes or until doubled in size. Bake in a 350 oven until nicely browned. Brush with softened butter or margarine just before they are done and again when you take them out. The double brushing makes for a very appealing top.
