Step by Step Method
Step 1
Heat the bacon grease in a Dutch oven or large pot. Add in stewing beef, cook all sides until well browned; remove to a bowl.
Step 2
Add in ground beef, onions and garlic; cook until well browned.
Step 3
Return the stewing beef back to the pot. Add tomatoes, beer, coffee, tomato paste and beef broth.
Step 4
Add spices Stir in kidney beans and peppers. Add salt and pepper.
Step 5
Simmer oven medium-low heat partially covered for 2 1/2 hours adding in more salt if needed.
Step 6
Top with shredded cheddar cheese, sour cream, crackers, or whatever floats your boat.
Step 7
