Ingredients

The ingredients are:
  • Bacon grease, or oil
  • 1 pound stewing beef (sliced into 1-inch cubes)
  • 1 pound ground beef
  • 2 medium yellow onions, chopped
  • 2 green bell peppers, chopped
  • 8 cloves garlic, minced
  • 1 can (14 1/2 ounce) diced tomatoes (undrained)
  • 1 can (12 ounce) beer (dark beer)
  • 1 cup brewed coffee (double-strength)
  • 2 cans (6 ounce) tomato paste
  • 2 cups beef broth
  • 1/4 cup brown sugar
  • 3 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 tablespoon unsweetened cocoa powder
  • 1 teaspoon oregano
  • 1 teaspoon cayenne pepper (or more to taste)
  • 1 1/2 teaspoons salt
  • 2 cans (15 ounce) kidney beans (undrained)
  • 2 to 4 red cayenne chili peppers, chopped (seeds removed unless your a heat freak!)
  • TOPPINGS
  • Shredded cheddar cheese
  • Sour cream (trust me you will need a ton of this to cool off your mouth!)

How to Make

  • Step 1: Heat the bacon grease in a Dutch oven or large pot. Add in stewing beef, cook all sides until well browned; remove to a bowl.

  • Step 2: Add in ground beef, onions and garlic; cook until well browned.

  • Step 3: Return the stewing beef back to the pot. Add tomatoes, beer, coffee, tomato paste and beef broth.

  • Step 4: Add spices Stir in kidney beans and peppers. Add salt and pepper.

  • Step 5: Simmer oven medium-low heat partially covered for 2 1/2 hours adding in more salt if needed.

  • Step 6: Top with shredded cheddar cheese, sour cream, crackers, or whatever floats your boat.

  • Step 7: Enjoy!
