"~~ This recipe was originally written for the RSC game @ FF&F, but not entered in the event due to an error on my part. It has been revised & I hope it will be tried. ~~ When I saw the RSC ingredient lists, I decided to start w/something easy like a smoothie. I struggled at first, but it all came together when Siggi came home from grocery shopping w/a case of evaporated milk that we can now get at our Costco store. I googled it & learned that heavy cream & Half and Half have more than twice the calories & 5 times the fat content of evaporated milk. It all seemed fated to happen --- Hence the recipe title. Step by Step Method

Step 1

Zest 1 of the fresh limes & set it aside inside a damp paper towel.

Step 2

Juice the fresh limes as follows: Microwave the limes on High for 20-30 seconds or until slightly warm. As the microwave heats the limes from the inside out, the juice capsules burst w/in the limes. When they are cool enough to handle (about 30 seconds), roll them on the counter-top, applying only gentle pressure. This will also break open the juice capsules, making it easier to extract their juice after being cut open. Then halve the limes & juice as normal. The juice capsules will have already burst, so less effort is needed to extract the juice. Use this method until you have accumulated 1/3 cup of lime juice.

Step 3

Add the lime juice, cream cheese & powdered sugar to the blender or mixing container you're using. Whiz the contents until smooth. Then add the evaporated milk & continue whizzing. The evaporated milk will begin to foam & add volume to your smoothie. The texture should be thick, creamy & best eaten w/a spoon.

Step 4

With a spatula, scrape the contents of the container into 2 sml glasses. Top each smoothie w/zest & a sprinkle of nutmeg (if using). Grab spoons, stir them in & ENJOY!

Step 5

NOTE RE YIELD: This recipe makes 2 small, but rich smoothies. If a larger volume is desired, feel free to add fresh ripe bananas as desired.
