Step 1

Soak and wash collard greens in a colander.

Step 2

Rinse and chop the greens into 1” pieces.

Step 3

In a large pot boil water with the ham hock. Add pepper.

Step 4

Drop the collards into the water and cook until limp

Step 5

Cook for 60 minutes.

These were pretty basic collard greens as written. I had to add Louisiana Tabasco Peppers in Vinegar and some of the juice to add more flavor.
