"The easiest fudge it takes about 5 minutes then some refrigeration time. For only peanut butter fudge omit the white chocolate. The sugar/cream mixture must be boiled for 2 1/2 minutes, a little more won't hurt anything less and the fudge won't set properly. This is some great fudge!"

Step by Step Method

Step 1

Butter an 8x8-inch baking pan.

Step 2

In a medium heavy-bottomed saucepan, bring sugar, salt and cream to a boil over medium heat, as soon as it's at a full rolling boil, reduce to low heat and boil for 2 1/2 minutes (no less) stirring very frequently. Remove from heat and immediately mix in white chocolate chips and the peanut butter (and vanilla if only making peanut butter fudge). Stir vigorously with a wooden spoon until smooth.

Step 3

Pour the mixture into the pan and allow to cool slightly then refrigerate.

Step 4

Slice into 1-inch squares.
