Step by Step Method

Step 1

Preheat oven to 350 degrees F, then grease a 9 x 9-inch square baking pan.

Step 2

Beat the eggs with the oil in a large bowl, then add in all remaining ingredients except the cheddar or mozzarella cheese; mix well to combine with a wooden spoon; transfer to a prepared baking dish.

Step 3

Bake for 35-40 minutes, or until lightly browned.

Step 4

Sprinkle the grated cheese on top and return to oven for another 2-3 minutes.

Step 5

Cut into squares

Delicious!! When hubby compliments the dish, you know you have a winner. I cut the recipe in half since I only had 2 zucchini and left off the cheese as the topping. It was still great!! Will make this one again!

This was fast and easy! I did make some changes but feel that the basic recipe is a winner. I doubled everything but the zucchini as I wanted to add some cooked chicken (about 3-4 cups). I do think that some chopped jalapenos, or other hot pepper would not hurt this at all. This made a lovely casserole that we put some marinara sauce over the top. Thank you for posting this keeper.
