  • 4 small zucchini, unpeeled and thinly sliced
  • 1 cup Bisquick Baking Mix
  • 1 small onion, chopped
  • 1 teaspoon garlic powder (garlic lovers can use more, or can use 2 garlic cloves, minced)
  • 1/2 teaspoon cayenne pepper (or adjust to heat level)
  • 1/2 cup freshly grated Parmesan cheese
  • 1/2-1 teaspoon dried oregano (rubbed between fingers to release the flavors)
  • 1 teaspoon dried parsley (or to taste)
  • 1/2 teaspoon seasoned salt and fresh ground black pepper, or to taste (can use white salt)
  • 1 cup shredded cheddar cheese or mozzarella cheese

How to Make

  • Step 1: Preheat oven to 350 degrees F, then grease a 9 x 9-inch square baking pan.

  • Step 2: Beat the eggs with the oil in a large bowl, then add in all remaining ingredients except the cheddar or mozzarella cheese; mix well to combine with a wooden spoon; transfer to a prepared baking dish.

  • Step 3: Bake for 35-40 minutes, or until lightly browned.

  • Step 4: Sprinkle the grated cheese on top and return to oven for another 2-3 minutes.

  • Step 5: Cut into squares
