Step by Step Method

Step 1

Cook the lobster about 15-17 minutes and put on platter to cool and collect the lobster juice; save.

Step 2

Dice and fry the bacon; set aside; save grease.

Step 3

Slice the onions and put into the pan with the grease along with the butter; cook till almost done; add the water part of which is the reserved lobster liquid.

Step 4

Lay the haddock on top of the onion; cover and steam till haddock is done; add the diced potatoes and steam till almost done.

Step 5

Add salt and pepper; stir VERY carefully.

Step 6

Add the milk; simmer BUT DO NOT BOIL for about 20 minutes; make the day before you want to eat it.
