Step by Step Method

Step 1

Cook pasta in heavily salted boiling water until al dente, drain saving 1/2 cup pasta water.

Veggies


Step 2

Blanch vegetables (not mushrooms) in boiling water a minute or two, just to slightly soften and preserve the color.

Step 3

Remove from heat source and set aside.

Step 4

Put olive oil in a skillet.

Step 5

Add crushed garlic and brown.

Step 6

Add shrimp and cook for a few seconds.

Step 7

Add mushrooms and the pre-blanched vegetables.

Step 8

Continue cooking until shrimp are done.

Step 9

Salt to taste and grind in pepper to taste.

Step 10

Remove pan from heat and set aside.

Step 11

Add pasta to the frying pan and toss with shrimp-vegetable mixture.

Step 12

Also mix in 1/2 cup of the pasta cooking water.

Step 13

Add back to heat and cook until tight.

Step 14

Season to taste.

Step 15

Add garnish.
