Step by Step Method

Step 1

Toss red potatoes cubes with canola oil, salt, and pepper.

Step 2

Cook in air fryer at 370 degrees for 30 minutes removing to shake them up half way through.

Step 3

Heat olive oil in a large skillet.

Step 4

Add onion, bell pepper, mushrooms and chicken.

Step 5

Season lightly.

Step 6

Cook until lightly browned.

Step 7

Remove chicken.

Step 8

Add sauce ingredients, heating over medium heat until well blended and dissolved.

Step 9

Add chicken and bring to a hard boil.

Step 10

Reduce heat and simmer for 20 minutes uncovered.

Step 11

Add slurry last 5 minutes of cooking cook until thick.

Step 12

Steam your broccoli in the microwave according the instructions on the bag.

Step 13

Butter and lightly season.

Step 14

Put broccoli on side of plate, add potatoes.

Step 15

Put chicken breast on top of potatoes.

Step 16

Place sauce on top.
