"This is a recipe I found in the Moosewood Cookbook. The popovers can be whipped up in no time while the rest of dinner is bubbling away on the stove. It's a very versatile recipe which you can make with 2, 3 or 4 eggs. The quantity of eggs used will determine how custard-like the popovers are. "

Step by Step Method

Step 1

Preheat oven to 375 Fahrenheit and brush the insides of 12 muffin cups the the melted butter.

Step 2

Add eggs and milk to a medium-sized bowl and whisk together until well blended.

Step 3

Add the flour and salt; whisk until well blended (a few lumps in the batter are okay).

Step 4

Fill muffin cups about 1/2 to 2/3 full.

Step 5

Bake 25 minutes if using 2 eggs, 30 minutes if used 3 eggs, 35 minutes if using 4 eggs (don't open oven while popovers are baking).

Step 6

Remove popovers from muffin cups immediately and prick with a fork so that the steam can escape. Serve hot from the oven; plain, with butter, with jam or with honey.

Where to begin? How can so few ingredients make something so incredible?! I halved the recipe, using 2 eggs made 8 popovers, and time 30 min, served with raspberry fruit spread. Had trouble stopping myself to take a photo. A real keeper - thanks, dreamer!

Engrossed

FANTASTIC! Soooo DELICIOUS!! I used 3 eggs and butter. My family has a recipe for popovers that we traditionally bake in ungreased mugs to get the crusty sides, but they are a pain to clean up. These couldn't have been easier, and don't tell my family, but I liked their custardy inside better than our recipe. I love eggy crepes too. This recipe is a breeze to clean up too.
