"Tapioca pudding is my favorite comfort food. I like it warm, but hubby likes it chilled. This is an easy version I came up with that we really like."

Step by Step Method
Step 1
Mix all ingredients except vanilla in large microwaveable bowl. Your ingredients should come up no higher than half way, so pudding doesn't boil over.
Step 2
Cook at full power in microwave, stirring every 2-3 minutes until mixture comes to a full boil. Should take about 10-12 minutes.
Step 3
Stir in vanilla and pour into dessert bowls. Pudding thickens as it cools.
