"As a typical Aussie family we love Damper every now and then. I have this recipe for many years, and it is my go to recipe when I want something quick and easy to serve with soup. You can whip it up in no time and bring it to the table hot ~ add lashings of butter and you have yourself the perfect thing to go with soup. SO YUM! This will not keep well so use it on the day it is made."

Step by Step Method

Step 1

Sift flour and salt into a bowl and rub in the butter until the mix resembles fine breadcrumbs (even in size).

Step 2

Make a well in the centre of the dry ingredient mix and add combine water and milk all at once; mix lightly with a sharp knife in a cutting motion.

Step 3

Turn mix out onto a lightly floured surface: knead lightly (not too much).

Step 4

Knead dough into a round, place on a greased oven tray. Pat dough out to a 15cm (6in) circle and with a sharp knife, cut 2 slits across the dough like a cross, approx. 1cm (3/4in) deep then brush the top of the dough with milk and sift an little extra flour over the dough.

Step 5

Bake in a hot oven for 10 minutes or until just golden brown, reduce the heat to moderate, and cook a further 15 minutes.

Step 6

Serve hot with lashing of butter.
