Step 1: Sift flour and salt into a bowl and rub in the butter until the mix resembles fine breadcrumbs (even in size).
Step 2: Make a well in the centre of the dry ingredient mix and add combine water and milk all at once; mix lightly with a sharp knife in a cutting motion.
Step 3: Turn mix out onto a lightly floured surface: knead lightly (not too much).
Step 4: Knead dough into a round, place on a greased oven tray. Pat dough out to a 15cm (6in) circle and with a sharp knife, cut 2 slits across the dough like a cross, approx. 1cm (3/4in) deep then brush the top of the dough with milk and sift an little extra flour over the dough.
Step 5: Bake in a hot oven for 10 minutes or until just golden brown, reduce the heat to moderate, and cook a further 15 minutes.
Step 6: Serve hot with lashing of butter.
