I must say that the flavour of this dish is better the second day (as most are). We really enjoyed the combination of ingredients. Used smooth peanut butter in the sauce as that is what I had. On the night after, I mixed the saved the pan drippings and mixed it with the rest of the peanut sauce and thickened it a wee bit with cornstarch and added the rest of the pork cut into bite size piece, cooked carrots and peas and served it over rice. When I make this again, I will make the peanut sauce a day ahead for the flavours to meld. This was a bit hit at our home. Thank you for sharing Mike! Made for Billboard Recipe Tag.
