Ingredients

The ingredients are:
  • 2/3 cup orange juice
  • 1/2 cup onion, chopped
  • 3 garlic cloves, peeled and thinly sliced
  • 1 tablespoon Madras curry powder ( hot)
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh ginger, peeled and grated
  • 1/2 teaspoon red chili pepper flakes
  • 3 pounds country-style pork ribs
  • Ground black pepper
  • SPICY PEANUT SAUCE
  • 1/2 cup peanut butter ( I use chunky)
  • 1/2 cup low-fat plain yogurt
  • 1 teaspoon soy sauce
  • 1 teaspoon sesame oil
  • 1 teaspoon hot chili oil
  • 1/2 teaspoon curry powder
  • 1/4 cup boiling water

How to Make

  • Step 1: Combine the orange juice, onion, garlic, brown sugar, curry powder, ginger and red pepper.

  • Step 2: Place the ribs in a large glass pan and pour the marinade over. Cover and refrigerate about 8 hours or overnight, turning ribs over a couple of times.

  • Step 3: Preheat oven to 325°F. Coat a large baking pan with rack with non-stick cooking spray.

  • Step 4: Remove the ribs from the marinade; reserve the marinade.

  • Step 5: Place the ribs on rack in baking pan, cover with foil and bake 1 hour. Uncover and sprinkle with the salt and pepper and continue baking another 45 minutes, basting

  • Step 6: Occasionally with the marinade.

  • Step 7: Serve with Spicy Peanut Sauce.

  • SPICY PEANUT SAUCE:

  • Step 8: Stir together peanut butter, yogurt, soy sauce, sesame oil, hot chili oil and curry powder. Slowly add boiling water, stirring until smooth.

  • Step 9: Serve immediately.
