Step by Step Method
Step 1
Preheat oven to 475F.
Step 2
Toss potatoes with oil & sprinkle with sugar, salt, & curry powder. Stir to coat evenly.
Step 3
Place pieces on baking sheets lined with foil.
Step 4
Roast potatoes middle rack, flip the pieces halfway through, apprx after 12 minutes.
Step 5
They will be tender & nicely browned (total time apprx 25 minutes).
Step 6
Remove & serve.
