Crunchy Thick-Cut Potato Chips/Fries

Step by Step Method
Step 1
Preheat oven to 200C (180C fan forced).
Step 2
Cut potatoes into 1.5cm thick slices and then cut each slice into 1.5cm thick chips/fries.
Step 3
Place potatoes in a large saucepan and cover with cold water and bring to the boil over high heat and then reduce the heat to medium and boil for 3 minutes or until just tender and the drain.
Step 4
Return the potatoes to the pot over low heat and toss for 30 seconds to a minutes or until excess liquid has evaporated.
Step 5
Remove from heat and transfer potatoes to a greased baking tray and spray with oil.
Step 6
Cool for 10 to 15 minutes and sprinkle with flour and paprika and season well with salt and pepper.
Step 7
Gently toss to combine and then spray well with oil.
Step 8
Bake, turning chips and spraying with oil halfway through the cooking of about 30 to 35 minutes or until golden and crisp.
Step 9
Serve with sea salt.
