DH loves anything with peas, and this was no exception! I used frozen cauliflower which worked out fine. Did not use as much ranch as called for and skipped the sour cream. I almost forgot the cashews so sprinkled them on top before serving!

Yummers. I love this simple salad. I love any pea salad and have made several variations, but this one is especially good because I love the cauliflower in it. I made a full recipe just for me and have happily been eating it for 3 days now. Yesterday I made an additional slice of bacon for breakfast and added it to my leftovers. It was really good too. Thanks for sharing this great keeper, Dee.
